Prime Cut Meats for Sausages

In the olden days, sausage was made to optimise every inch of the fallen hunted animal. After the butcher had his meat, the left over trimmings would then be collected and put aside. But instead of throwing them away, salt, pepper, and a bunch of spices were thrown in so as to extend the shelf life of the trimmings. These were then cured by means of drying, smoking, or salting.

Nowadays, you do not have to wait for a good hunt to avail yourself to sausages. And it does not have to come from left over pieces of the meat. Some sausage makers, especially chefs working for high end restaurants, use meat from prime cuts to turn into sausages in order to have a feast of it. It is no wonder then that sausages taste so good these days.

I got a smoked sausage gift from my son recently. Its one of those expensive kinds. I must say I enjoyed eating it tremendously.
